Αrtisanal, hard, white cheese, mainly for cooking, exclusively from goat milk from small producers of Ios. This cheese has a strong salty flavor after aging in brine. It is mainly combined with pasta and red sauces. It is one of the oldest kinds of cheese made in Ios. It matures for at least 6 months.
