Artisanal, soft, table, blue cheese exclusively from goat milk from small producers of Ios. It is made of matured myzithra (about two years old) and small pieces of mature graviera. It has a characteristic spicy flavor which is complemented by white pepper and thrumbi (a local herb) collected on the island. It is one of the oldest kinds of cheese made in Ios. Its creamy texture makes it perfect for spreading.
